Using hashbrowns
I like using frozen hashbrowns and I put them right in the greased pie pan. However, the hashbrowns do not have to be thawed, you can use them frozen. The potatoes will be cooked first before the eggs are added to make sure they are cooked well.

Bake
This egg quiche needs to be baked at 375 degrees for about 45 minutes. Now, the potatoes will bake for 15 minutes first, then the egg and spinach mixture will be baked on the hashbrowns. The spinach, eggs, cooked bacon, cheese will be all mixed together. That baking process will take about 35 minutes or until the eggs are cooked through.

It fits perfectly in a 9 inch pie pan though you can make it in a 9 inch square pan as well, though it may be a bit thinner.

Bacon Spinach Quiche

- 1 9 inch pie pan
Ingredients
- 3 eggs
- ¾ cup milk can use almond milk
- 4 strips bacon cooked and crumbled
- 2 cups frozen shredded hashbrowns enough to cover the bottom of the pie pan
- ½ cup fresh spinach chopped
- 1 cup cheddar cheese shredded
- 1 teaspoon salt
- 1 teaspoon ground pepper
- 1 teaspoon garlic powder
Instructions
- Preheat oven to 375℉. Grease a 9 inch pie pan with cooking spray.
- Place frozen hashbrowns on the bottom and up the sides of the pie pan. Bake for 15 minutes.
- Meanwhile, cook the bacon until crisp. Drain the grease.
- Remove the hashbrowns from the oven. Whisk together eggs and milk until well blended. Stir in spinach, bacon, cheese, salt, pepper, and garlic powder.
- Bake for another 35-40 minutes or until quiche is firm and cooked through.
- Let cool for 10 minutes. Slice and serve.
