Baaacccooonnn! That is the common cry echoing throughout my house when bacon is being served. Yes, folks, bacon is rather popular at my house. So this Bacon Cheeseburger Casserole really hit the spot. It will at your house too.
Bacon cheeseburger casserole has all the ingredients needed to score big with my family. I was prepared for that to be the case.
Except.
Our oldest, Ryan, 15, was away at IFCA Youth Convention. There he can do Ministry Training Areas (MTA's) such as playing his trumpet and apologetics. *Side note PSA: Never, EVER, allow the braces to come off less than a week before a big trumpet competition. The results may not be pleasant. To anyone. The player or the judges. Ouch.
Anyway, I made the bacon cheeseburger casserole like I usually would (aka: a lot) so used to a hungry 15 year old eating it for supper and for lunch the next day.
Well, with Ryan gone, I had a lot of leftovers. It was noodle overload people.
Bacon Cheeseburger Casserole
This casserole has all the ingredients you would see on a bacon cheeseburger. The only difference would be instead of bread, I added noodles. There are tomatoes, tomato sauce, bacon (or bbbaaaaacccooonnn!), hamburger and of course, cheese.
There is also a little onion. I used white onion but a green onion would be great as well. In fact, my hubby would have preferred the green onion but I didn't have any. (Sorry, Dear.)
The result of this cheesy casserole is a simple meal you can make for your family without having to fire up the grill. You can fire up the broiler in the oven to lightly brown the cheese if you want. Oh, yummy.

Bacon Cheeseburger Casserole

- 1 lb hamburber, cooked and drained
- 1 can (6 oz) tomato sauce
- 1 can (12 oz) diced tomatoes, with chili's or without (do not drain)
- 1 lb large macaroni noodles, cooked and drained
- 8 strips cooked bacon, crumbled
- 2-3 cups cheddar cheese
- ¼ cup onion, optional
Instructions
- Mix together hamburger, tomato sauce, tomatoes, onion, noodles and 1 cup cheese in a large bowl
- Place in a greased 9x13 baking dish
- Sprinkle bacon on top
- Sprinkle rest of cheese on top of bacon
- Cover with foil and bake in a 375* oven for 20 minutes
- Remove foil and bake for 5 more minutes
- Remove from oven and let cool for 5 minutes before serving
