    Oatmeal Bread

    Handmade Oatmeal Bread is soft, made without a bread machine and simple. This recipe makes two loaves and is great for family dinners. Serve this bread with butter, honey or jam!

    The softness of this Oatmeal Bread is credited to the fact it has oatmeal in it, but also this bread uses brown sugar instead of granulated sugar. There are many purposes for this bread and let me tell you, it makes a great sandwich bread. It also makes great slider buns.

    There are so many recipes you can serve this bread with such as Cheesy Hamburger Potato Casserole or Crock Pot 4 Layer Hamburger Casserole. It is delicious with a pasta dish too!

    Ingredients

    • bread flour - all purpose flour can work, but I recommend bread flour
    • water
    • yeast - active dry yeast
    • brown sugar
    • oatmeal - quick oats work best
    • butter
    • salt

    Yeast

    To make the yeast start to activate, you need to let the yeast soak in warm water for a little while as you are mixing the other ingredients. It doesn't take long. The key is to not let the water be too hot or too cold. The best temperature is lukewarm. Like Goldilocks porridge.

    Quick oats verses old fashioned

    Quick oats is the better options for this bread just because they cook into the bread quicker. That said, I didn't have any when I made this so can you make old fashioned oats into quick oats? Yes you can! I was going to put the old fashioned oats into the food processor. Then I realized I didn't want to dirty another dish. So, I just used my hands. (Quite classy, right?) Simply take a handful and "squish" the oats. They will crumble easily and that will be turned into quick oats.

    Rising tips

    This bread will need to rise after kneading the dough.

    • Be sure to spray the bowl with cooking spray so the dough will remove from the bowl easily.
    • Cover the dough with a greased (sprayed) plastic wrap.
    • Place the bowl someplace warm until the dough is doubled in size.

    Bake

    After rising, the dough will be divided in two, then let rise again for about 20 minutes. The bread will be baked at 350 degrees for 40 minutes or until the bread is a golden brown.

    Equipment

    • 1 large mixing bowl

    Ingredients

    • 1 cup quick oats
    • ยฝ cup whole wheat flour
    • ยฝ cup brown sugar
    • 1 Tablespoon salt
    • 2 Tablespoon melted butter
    • 2 cups boiling water
    • 5 cups bread flour
    • 2 ยผ teaspoon active dry yeast

    Instructions

    • Preheat oven to 350℉. Grease two 9 inch bread loaf pans.
    • Dissolve yeast in ยฝ cup warm water in a small bowl.  Set aside.
    • Mix together oats, whole wheat flour, sugar, salt and melted butter in a large mixing bowl. If you don't have whole wheat flour, use ยฝ cup of bread flour.
    • Add boiling water and stir. When batter has cooled to lukewarm, add yeast mixture. Stir.
    • Stir in 5 cups of flour, two cups at a time until all flour is mixed in.
    • Turn out on floured board or counter and knead for 6-7 minutes.
    • Place in greased bowl and cover with plastic wrap. Let rise until double in size, about an hour.
    • Punch down and divide in two pieces. Shape and place in 2 greased loaf pans.
    • Let rise again for about 20 minutes while oven is preheating to 350℉.
    • Bake for 30-40 minutes or until golden brown.
