    Simple Cherry Coffee Cake

    Simple. Delicious. Flavorful. Wonderful. A great breakfast is this Simple Cherry Coffee Cake. Easy ingredients for the toppings and sweet cherries for the filling. Sweet breakfast and brunch recipe.

    As I am typing this, my daughter, Cora, looked over my shoulder and said-Oh, that was so good. High praise for this Simple Cherry Coffee Cake.

    There aren't many ingredients in this fruit coffee cake and most of them you will probably already have in your pantry. You may not have the cherry pie filling, but if you shop at Aldi's, you can buy a can rather inexpensively and then you will have it in your pantry for delicious recipes. I like to keep a few pie filling cans sitting around. You can also make cherry cheesecake or air fryer cherry turnovers.

    Ingredients

    • flour
    • sugar
    • baking soda
    • baking powder
    • margarine
    • eggs
    • sour cream
    • water
    • vanilla
    • cherry pie filling
    • 9x13 cake pan

    This coffee cake has a streusel topping, sweet cherries and soft crust. You can add a frosting drizzle to the top but I didn't as we thought it tasted great without the drizzle.

    Instructions

    You will mix the ingredients together then spread half of batter on bottom of a greased 9x13 pan then spread cherries on top. When you mix the dry ingredients together, I would use a whisk. It helps break Then take the rest of the batter and drop in spoonfuls on top. Spread carefully. If some of the cherries are peaking through the top, that is fine!

    In a separate bowl, you will mix together the streusel ingredients and sprinkle it on top of the coffee cake. You may want to use your hands to mix together the streusel topping. It is much easier then a spoon and it incorporates the butter better. Then bake.

    Can I use yogurt instead of sour cream?

    Yes, you can! Just sub equal amounts and it will work.

    How do I know if the coffee cake is done?

    You can test it with a toothpick or it is when the top is starting to turn a light golden brown.

    Can I use another type of pie filling?

    Sure. Apple would be good so would blueberry. I would add 1 teaspoon cinnamon to the topping if I was making apple coffee cake.

    Storage

    To store these leftovers, if you have any, cover the pan with foil and place it in the refrigerator. You can warm up a piece by placing it in the microwave for 20 seconds. Be sure to test carefully to make sure the piece isn't too hot to eat.

    Ingredients
      

    • 3 cup flour I used unbleached
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • ¾ cup sugar
    • 1 cup margarine (or butter)
    • 2 eggs
    • ½ cup sour cream
    • ¼ cup water
    • 1 teaspoon vanilla
    • 1 can cherry pie filling
    • ½ cup sugar
    • ½ cup flour
    • 2 T butter

    Instructions
     

    • Mix together flour, baking soda and powder, sugar
    • Mix in the butter
    • Stir in eggs, sour cream, vanilla and water
    • Mix well
    • Spread ½ batter in a greased 9x13 pan
    • Spread on cherry pie filling
    • Drop by spoonfuls on top of cherries and spread
    • Blend together ½ cup sugar, ½ cup flour and 2 T butter
    • Sprinkle streusel topping on top of batter
    • Bake for 35 minutes at 375* or until coffee cake tests done

      My toddler and I made the cherry coffee cake this morning and I have to say it is so delicious, it is nearly gone. My husband loves it. I subbed FAGE 0% yogurt because that’s what I had available and it came out better than expected. It formed a crusty bottom and it is soft and moist on the inside.
      I also made a vanilla cream cheese icing to drizzle. I plan to make it again tomorrow for my church group. I’m so glad I found this recipe!! Thank you!!
