As I am typing this, my daughter, Cora, looked over my shoulder and said-Oh, that was so good. High praise for this Simple Cherry Coffee Cake.
It was a Sunday afternoon, what sounds good, let’s make something dessert. It is more a breakfast dish, but hey, it worked for a Sunday afternoon as well. 😉
There aren’t many ingredients in this fruit coffee cake and most of them you will probably already have in your pantry. You may not have the cherry pie filling, but if you shop at Aldi’s, you can buy a can rather inexpensively and then you will have it in your pantry for delicious recipes.
Simple Cherry Coffee Cake
This coffee cake has a streusel topping, sweet cherries and soft crust. You can add a frosting drizzle to the top but I didn’t as we thought it tasted great without the drizzle.
A few tips:
:: Spread half of batter on bottom of 9×13 pan then spread cherries on top. Then take the rest of the batter and drop in spoonfuls on top. Spread carefully. If some of the cherries are peaking through the top, that is fine!
:: Bake at 375*
:: You can use sour cream in the recipe, as it calls for, or use vanilla yogurt (or plain) for a healthier option.
:: Serve for breakfast with fruit or for dessert. Great for family, guests, bridal shower brunches or potlucks.
A delicious coffee cake with sweet cherries for a delicious brunch and breakfast treat.
- 3 cup flour (I use unbleached)
- 1 tsp baking soda
- 1 tsp baking powder
- 3/4 cup sugar
- 1 cup margarine (or butter)
- 2 eggs
- 1/2 cup sour cream
- 1/4 cup water
- 1 tsp vanilla
- 1 can cherry pie filling
- 1/2 cup sugar
- 1/2 cup flour
- 2 T butter
Mix together flour, baking soda and powder, sugar
Mix in the butter
Stir in eggs, sour cream, vanilla and water
Spread 1/2 batter in a greased 9x13 pan
Spread on cherry pie filling
Drop by spoonfuls on top of cherries and spread
Mix together 1/2 cup sugar, 1/2 cup flour and 2 T butter
Sprinkle streusel topping on top of batter
Bake for 35 minutes at 375* or until coffee cake tests done
