    My children were hovering again. They had heard what I was making and came by in droves to try and get a taste of this Peach Streusel Bread. They obviously smelled the sweet goodness of the peaches and couldn't stay away. Not that I blame them.

    I could hardly wait to try any myself. This bread was part of the prepping school lunches last Saturday. It freezes great so I knew it would be perfect for school lunches, as a grab and go. I also knew it would disappear quickly if I didn't get it in the freezer fast. The peaches, cinnamon and brown sugar all combine for a wonderful, flavorful bread.

    You know, it is funny. Today my children start school. During the summer, on certain days, they would drive me batty. All four of them would occasionally fight and argue. From the youngest to the oldest, you know how it goes, they would get on each other's nerves. Therefore I would occasionally lose my mind. ;-)

    This morning, I forget about the few frustrating times we had and I just think about them not being here. Well, three of them; Caleb is still with me. And I get sad.

    Motherhood.

    Back to the peach streusel bread. I'm glad I prepped ahead of time and made this bread for the freezer. I know my kids will enjoy it as they eat lunch at school and think of me. I know they will appreciate the sweet goodness this bread has to offer and remember their mom fondly. Or I am kidding myself and they will be too busy catching up with old friends. Either way.

    They'll enjoy the bread.

    Course Bread

    Ingredients
      

    • 1 egg
    • ¾ cup sugar
    • 1 cup milk
    • ¼ cup vegetable oil
    • 1 teaspoon vanilla
    • 3 cups all-purpose flour
    • 1 teaspoon salt
    • 4 teaspoons baking powder
    • 1½ cup fresh peaches , chopped and peeled
    • For the Streusel Topping
    • ¼ cup flour
    • ½ cup brown sugar
    • 2 T butter (softened)
    • 1 teaspoon cinnamon

    Instructions
     

    • Mix the egg and sugar together.
    • Add milk, oil and vanilla. Mix well.
    • Stir in the flour, salt, baking powder. Fold in the peaches.
    • Spread in one greased loaf pan.

    For The Topping

    • Mix the flour, brown sugar, butter and cinnamon together.
    • Sprinkle over the peach batter.
    • Bake in a 350* oven for 55-60 minutes or until toothpick inserted into the center comes out clean.

      Can I divide batter into 3 mini loaf pans?

        I'm sure you could. I'm not sure how many mini loaf pans would be needed, but whatever batter would be left could go in a muffin pan. I use mini loaf pans a lot, they are perfect for the kids!!

      I doubled the recipe to make 2 loaves. I used 4 peaches. They were easy to peel after I dunked them in boiling water for a few seconds, but very slippery to slice and chop so be careful! It took longer to bake than the recipe indicated, and cook time was different for the 2 pans I used- 70-90 mins. Other than that it worked great as written!
