This vegetable soup recipe is a little heavier on the beef and a little lighter on the mix of vegetables. However, you can adjust that anyway you want.

- potatoes - peeled or unpeeled

The potatoes in this recipe are not peeled. If you prefer to peel the potatoes, you certainly can.
Variations
This recipe can have a variety of variations. It can be meatless. It can have a lot of vegetables. Personally, I would use potatoes for sure but other than that, use whatever vegetables your family likes. If your family likes peas, add peas. If your family likes corn, add corn.
My family likes the taste of celery in soups (such as chicken tortellini) but doesn't want to actually crunch the celery. So a trick I learned from my sister in law is to place whole celery in the crock pot, then pull it out before eating it.

Crock Pot Vegetable Beef Soup

Ingredients
- 2 lbs beef stew meat
- 12 oz petite diced tomatoes
- 1 cup carrots chopped
- 4 medium potatoes washed, chopped and peeled (if desired)
- 2 stalks celery about 1 cup if chopped, or leave whole and pull out when time to eat
- 8 oz tomato sauce
- 4 cups beef broth
Instructions
- Cook the beef stew meat in a skillet with 2 tablespoons of butter until browned.
- When meat is done, place potatoes, carrots, celery and meat in the crock pot.
- Pour tomatoes, tomato sauce and broth over top of all. Add salt, pepper and garlic powder.
- Cook in crock pot for 6 hours on high or 8 on low.
Notes
- If you would like to add a chopped yellow onion, add ½ cup.
- If you have another crock pot, the stew meat can cook in the other crock pot for 3 hours on high, then added to the crock pot containing all the other ingredients.
- Serve with crackers, cheese or bread.

I make a beef vegetable soup handed down through four generations in my family -- only now I use a slow cooker. My recipe contains mixed vegetables (I use frozen) along with the potatoes and celery. I use stew beef or cut up round steak though my great grandmother always kept her steaks whole. This is a hearty but not heavy soup, freezes well, and tastes delicious. Thanks for sharing.
