    Crock Pot Vegetable Beef Soup with carrots, beef, tomatoes and potatoes is so easy to make. Put it all in the crock pot and walk away. So delicious and perfect for a cold day.

    This crock pot vegetable beef soup is a spin off of a soup my stepdad makes. It.Is.So.Good.

    Unfortunately, my family is a little on the picky side when it comes to veggies. In light of that, I adapted his soup and made the Strawn veggie friendly version. Everyone eats it, everyone likes it and when I go to my mom's house, Jerry makes me his soup with the peas, beans, etc. It is a win for everyone.

    What is the best about this soup is that is is made in the crock pot. All of it. You don't have to cook the meat ahead of time and dirty another pan. Instead, you put all ingredients into the crock pot and walk away.

    After the soup has had a chance to cook for a while, you can take two forks and shred the meat into chunks. Easy peasy, my friends.

    How to make crock pot vegetable beef soup

    Beef, potatoes, carrots, celery in a crock pot for vegetable beef soup

    The short version: cut it all up and place in crock pot.

    The long version: I would use potatoes for sure but other than that, use whatever vegetables your family likes. If your family likes peas, add peas. If your family likes corn, add corn.

    My family likes the taste of celery in soups (such as chicken tortellini) but doesn't want to actually crunch the celery. (I know!) So a trick I learned from my sister in law is to place whole celery in the crock pot, then pull it out before eating it.

    Works like a charm and everyone stays happy.

    In my crock pot vegetable beef soup, I added potatoes, carrots, celery and a can of tomatoes. The tomatoes had chili's in them for a little extra kick.

    You can certainly use regular tomatoes or no tomatoes at all. In place of the tomatoes you can use an extra can of tomato sauce.

    Ingredients

    • 1 lb beef (I used Eye Of Round Steaks)
    • 1 12 oz can tomatoes with chili's
    • 1 cup carrots, chopped
    • 3 medium potatoes, peeled and chopped
    • 2 stalks celery, left whole or chopped
    • 1 8 oz can tomato sauce
    • 4 cans beef broth
    • 2 cups water

    Instructions

    • Place potatoes, carrots, celery in crock pot
    • Set meat on top of vegetables
    • Pour tomatoes, tomato sauce, broth and water over top of all
    • Cook in crock pot for 6 hours on high or 8 on low

      I make a beef vegetable soup handed down through four generations in my family -- only now I use a slow cooker. My recipe contains mixed vegetables (I use frozen) along with the potatoes and celery. I use stew beef or cut up round steak though my great grandmother always kept her steaks whole. This is a hearty but not heavy soup, freezes well, and tastes delicious. Thanks for sharing. The posting inspired a trip down memory lane and the pot of soup presently cooking in my kitchen.
