- 1 cheese grater
Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoon ground cinnamon
- ½ teaspoon ginger
- 1 cup packed light brown sugar
- ½ cup vegetable oil
- ⅔ cup milk can use almond milk
- 3 eggs
- 1 teaspoon vanilla extract
- ¾ cup carrots shredded
Instructions
- Preheat oven to 350℉. Spray 11x17 pan with cooking spray.
- Mix flour, baking powder, baking soda, salt, cinnamon, ginger, brown sugar in a large bowl.
- Stir in oil, milk, eggs, vanilla into the dry mixture. Fold in the carrots.
- Spread on the bottom of a 11x17 pan coated with cooking spray.
- Bake at 350℉ for 15-17 minutes or until cake is firm and a toothpick inserted in the center tests clean.
- Let cool on the counter than frost with frosting. Serve.
