    The spices and tastes of a carrot cake is a popular one in spring time. With Easter, a classic recipe is a carrot cake and we want to help you out with a delicious alternative, Carrot Cake Bars. These bars are simply amazing with a smooth cream cheese frosting on top.

    Carrot cake has just that, carrots in the cake. Trust me when I say, the carrots, if shredded right, don't even crunch. If you are like me, a smooth cake with a crunch is a deal breaker. This cake is smooth all the way through.

    Ingredients

    • flour - all purpose
    • baking powder
    • baking soda
    • salt
    • cinnamon
    • ginger
    • brown sugar
    • oil - vegetable
    • eggs
    • milk
    • vanilla
    • carrots - shredded

    The ingredients are pretty basic and ones you are likely to have in your pantry.

    Shredding the carrots

    The carrots are shredded using a cheese shredder. It will help making the carrots small enough so they cook into the cake well.

    One carrot is the perfect amount for this cake, though if you want more added, it will certainly work.

    Mixing the cake

    The dry ingredients will be mixed first, than the wet ingredients. Then the carrots are folding into the batter. Mix until the batter is mixed well, but don't overmix or the cake could end up a little tough.

    Add-Ins

    • raisins - regular or golden
    • coconut - shredded
    • vanilla frosting instead of cream cheese frosting
    • powdered sugar topping instead of frosting
    • walnuts - chopped

    Bake

    Bake at 350 degrees for 15-17 minutes. The pan is a thinner pan, 11x17, so it won't take as long as a regular cake. The cake will appear firm with a toothpick inserted in the middle coming out clean.

    Can I bake this in a normal cake pan?

    Yes, this recipe will work for carrot cake. In a cake pan, it will be cake not bars.

    Do I have to put frosting on this?

    No, powdered sugar works well too!

    Can I add applesauce to this instead of oil?

    Oil is preferred for this cake.

    Equipment

    • 1 mixing bowl
    • 1 cheese grater

    Ingredients

    • 2 cups all purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • 1 ½ teaspoon ground cinnamon
    • ½ teaspoon ginger
    • 1 cup packed light brown sugar
    • ½ cup vegetable oil
    • ⅔ cup milk can use almond milk
    • 3 eggs
    • 1 teaspoon vanilla extract
    • ¾ cup carrots shredded

    Instructions

    • Preheat oven to 350℉. Spray 11x17 pan with cooking spray.
    • Mix flour, baking powder, baking soda, salt, cinnamon, ginger, brown sugar in a large bowl.
    • Stir in oil, milk, eggs, vanilla into the dry mixture. Fold in the carrots.
    • Spread on the bottom of a 11x17 pan coated with cooking spray.
    • Bake at 350℉ for 15-17 minutes or until cake is firm and a toothpick inserted in the center tests clean.
    • Let cool on the counter than frost with frosting. Serve.
