    A delightfully refreshing salad that is perfect for a side dish with a Holiday dinner or a weeknight supper. Enjoy the sweet taste of the raisins, combined with the crunchy broccoli and pecans.

    Broccoli Salad is a salad with terrific flavor and texture. The fresh broccoli combines with the sweet and plump raisins and crisp bacon. The bite in this salad is fantastic!

    Broccoli is a great vegetable no matter how it is eaten. Roasted Broccoli is a simple vegetable recipe while Crock Pot Broccoli Rice is easy as it is made in the crock pot. (It is delicious too!)

    Ingredients

    • fresh broccoli - always fresh, not frozen
    • golden raisins - can use regular raisins
    • bacon - cooked and crumbled
    • mayonnaise - can use Miracle Whip
    • vinegar - white
    • sugar
    • pecans

    The sauce

    The topping for this Broccoli Salad is a simple sauce made of three ingredients. Mayonnaise, vinegar and sugar. The vinegar is used to help balance the mayonnaise and sugar. I do recommend not leaving out the sugar. Miracle Whip can be used if you prefer the taste and zing of Miracle Whip. However, the vinegar would not be needed.

    Tip

    Be sure to let the salad chill in the fridge for at least an hour to chill. Four hours is preferred but if you are in a rush, an hour will do. You want to give the flavors a chance to become friends and blend well.

    The bacon and raisins

    The bacon will need to be cooked and crumbled before adding it to the recipe. I find it helpful to cut the bacon into pieces before frying the bacon. I think it cooks quicker and it is easier to handle after cooking. The bacon will also need to be drained on a paper towel to remove the grease.

    The raisins are a necessary part of this recipe. They add a sweetness that is important to help balance the broccoli. Golden raisins are perfect for this, but if you would prefer regular raisins, that is perfectly fine.

    Equipment

    • 1 serving bowl
    • 1 mixing bowl

    Ingredients

    • 2 heads broccoli the florets and stems, washed and cut into bite sized pieces
    • 6 slices bacon cooked and crumbled
    • ½ cup golden raisins
    • ½ cup pecans chopped, optional
    • 1 cup mayonnaise
    • ½ cup sugar
    • 2 tablespoons white vinegar

    Instructions

    • Cook and crumble the bacon into pieces.
    • Wash and chop the broccoli into bite sized pieces.
    • Add broccoli into a bowl, then add the raisins and bacon.
    • In a separate bowl, mix together mayonnaise, sugar and vinegar.
    • Pour the mayonnaise mixture over the broccoli mixture. Stir. Sprinkle in the pecans if desired.
    • Place the refrigerator for at least 1 hour, but four is preferred.
    • Serve.

    Notes

    • Golden raisins or regular raisins can be used.
    • Miracle Whip can be used in place of the mayonnaise.
    • Pecans are optional.
