    Blueberry Quick Bread

    A simple Blueberry Quick Bread with loads of sweet blueberries is perfect for breakfast, lunch or snack. The bread is in the oven quickly and the results are perfection. Your family will eat this bread up!

    Oh sweet blueberry!

    This quick bread recipe is simple to make and easier to enjoy! Blueberry Quick Bread has blueberries in a sweet bread that pairs well with butter and blueberry jam or honey.

    I have taken this bread to cross country practices and let me tell you, it gets gobbled up! I enjoy how easy it is to make and I can double or triple the batch without much effort. Cinnamon Quick Bread is the same idea, great for hungry teenagers!

    Ingredients

    • all purpose flour - I used unbleached
    • sugar
    • baking soda
    • salt
    • milk - I used almond milk
    • egg
    • oil
    • vanilla extract - I used homemade but store bought works well

    When it comes to flour, all purpose needs to be used, but it doesn't matter if unbleached or bleached is used. I prefer unbleached just so it is processed one less time.

    I make my own vanilla extract (which is easy to do!) so that is what I use. However, buying extract is great as well. Almond milk or soy milk can be used and it will be okay verses using regular milk.

    Fresh or frozen blueberries

    One of the may things that is great about this recipe, is that fresh or frozen blueberries can be used. The frozen blueberries don't need to be thawed either so you can add them right right in to the batter, even if they are still frozen.

    Can this recipe be doubled?

    Yes! As mentioned above, doubling or tripling the batch is as easy as can be. As long as you have enough loaf pans, you can make as many batches as you would like. The only recommendation I would have, is if you have a full oven, you may need to stretch the baking time a bit. Be sure to check the bread to make sure it isn't getting over cooked, but sometimes with a full oven, it may need a few extra minutes of baking time.

    Equipment

    • 1 loaf pan

    Ingredients

    • 2 cups all purpose flour I use unbleached
    • ½ cup sugar
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 cup milk almond milk can be used
    • 1 egg
    • ¼ cup vegetable oil
    • 1 teaspoon vanilla extract
    • 1 cup blueberries fresh or frozen

    Instructions

    • Preheat oven to 350℉. Grease loaf pan with nonstick cooking spray.
    • Mix flour, ½ cup sugar, baking soda, salt, together in large mixing bowl.
    • Mix in milk, egg, oil and vanilla. Stir well.
    • Fold in blueberries.
    • Bake at 350℉ for 40-45 minutes until center is set. Oven times may vary.
    • Remove from oven and let cool for 10 minutes on a cooling rack. Remove from pan with a knife and slide bread onto a cooling rack.
    • Serve.
