    Freezer Friendly Burritos

    This simple, freezer friendly burritos is a great lunch option or on the go meal. Quick to make and ready for your hungry family to enjoy. Make up a batch then pop them in the freezer. When it is lunchtime, you can microwave one and it is ready to eat. Delicious!

    I enjoy making these for my husband. Actually, my oldest likes them as well. These freezer friendly burritos only have a handful of ingredients in them (besides the tortilla shells) and they are flavorful and great for lunches.

    Now, being that hamburger cost the same as a small diamond right now, I don't make this that often. However, with my great deal on hamburger on Black Friday, these burritos were the first thing I made.  

    What is so great about these burritos is that they freeze so well and are so easy to heat up for a quick lunch or on the go supper.

    How to make Freezer Friendly Burritos

    To make these burritos, you simply fry 2 ½ pounds of hamburger until no longer pink. (Add salt and pepper to taste. You can also add taco seasoning if you would like.)

    Then add 1 can of drained chili beans, (or you can use black beans if you prefer), 1 can of drained petite diced tomatoes with chili's and 1 small can of tomato sauce. Cook on medium heat and stir occasionally. I cook for about 10 minutes.

    Add cheese and stir until melted.

    Freezing the burritos

    Take about ½ cup (or more if you prefer) of hamburger and bean mixture and place in a tortilla. Fold tortilla up like a burrito and place seam side down on lightly greased cookie sheet.

    Repeat until mixture is gone. Then "flash freeze" the burritos for two hours in the freezer. Remove from freezer and place in freezer bags.

    To reheat, take burrito out of freezer bag and place on a plate. Cook in the microwave for about 1 to 2 minutes or until heated through. Eat immediately or wrap in foil and place in lunch bag.

    These freezer friendly burritos are great to pack in lunches or when that teenager of yours needs a little something extra to eat.

    It is great to get out of the peanut butter and jelly or ham sandwich lunch rut. It's a warm, healthy and enjoyable recipe.

    Ingredients
      

    • 2 ½ lbs hamburger
    • 15.5 oz chili beans (or black beans)
    • 8 oz tomato sauce
    • 10 oz diced tomatoes with chili's
    • 1 cup cheddar cheese
    • 10 tortillas

    Instructions
     

    • Cook hamburger until no longer pink. Drain the grease
    • Add 1 can beans, tomato sauce and diced tomatoes and cook on medium heat for 10 minutes
    • Add cheese and melt
    • Add ½ cup mixture in tortilla and fold over like a burrito (seam side down on sheet)
    • Continue until all mixture is used
    • Flash Freeze burritos on baking sheet for two hours
    • Take out and wrap in freezer bags
    • Place in freezer
    • To eat: Remove one burrito from freezer bag
    • Microwave for 1 to 2 minutes or until thoroughly cooked through
