Sometimes a girl gets a craving for Creamy Chicken Salad. Then this recipe is born. Made with grapes, celery and Miracle Whip, you will be taking these sandwiches to gatherings and potlucks. Delicious!
I don't eat chicken salad that often, nor do I make it that often. In fact, the only time I usually eat it is at a church potluck. {You can see tips for potluck patience with children here}. Every once in a while, however, I get a craving for creamy chicken salad.
Are you a fan of mayonnaise? Me, not so much. My husband is a Miracle Whip fan so whenever I need to make something that calls for mayonnaise, I use Miracle Whip. This salad was delicious with Miracle Whip.
The ingredients were simple and you likely have these at home.
Cooked shredded or diced chicken, chopped celery, quartered grapes and hard boiled eggs.

If you buy chicken or hamburger at the store, when you are unpacking the other groceries, cook up the chicken or hamburger immediately. Then you will have the meat ready the next time you want to put together a recipe like this creamy chicken salad or one dish cheesy chicken pasta. So simple, time saving and it works!
Be sure to add your desired amount of Miracle Whip. Some people like more, some people like less. I will give you a guideline and you take it from there. :-)
Creamy Chicken Salad
To make this chicken salad, simply mix all the ingredients together in a bowl and chill. Serve on bread, rolls or on lettuce wrap. Thin buns were found at Aldi's, almost like a pita, and my husband really liked them. Less bread than traditional buns but as he is cutting down carbs, he could still enjoy it.

Creamy Chicken Salad

- 2 cups cooked chicken (chopped)
- ¾ cup grapes , sliced
- ½ cup celery , chopped
- 1-2 cups Miracle Whip (depending on taste)
- 4 hard boiled eggs , chopped
Instructions
- Mix all ingredients together in a bowl
