How many on you have had your child come up to you and say, "Mom, I forgot to tell you, but you are supposed to bring a dessert to XYZ. Sorry about that". Happens to me all the time. However, the good news is the next time that happens, you have an easy dessert recipe you can go to. Pretzel Toffee Bars sound fancy and hard to make, but they are not.
You got to like recipes like that, right?
Last minute surprise
So? Has it happened to you? Well, with four children, I find myself volunteered to make many desserts, breakfast items and snacks. Especially the more involved they get with after school activities!
I don't mind, of course, as baking is second nature to me. However, the last minute notice is the frustrating part. Namely, from Ryan, 14.
You can imagine.
Pretzel Toffee Bars starts with a base crust of shortbread then uses sweetened condensed milk as the toffee layer. The chocolate topping? Simply semi-sweet chocolate chips melted on their own. I don't even need to do anything for it. Sweet! (No, pun intended) ;-)
If you don't like semi-sweet chocolate, use milk chocolate or, dare I say, white chocolate. Oh, that would be lovely.
The Pretzel Toffee Bar Recipe
This was still warm and gooey from the melted chocolate chips. Good this way, great chilled!
The base is a simple 4 ingredient shortbread like crust. It is rather dry, to be honest. However, when you put the shortbread crust as the bottom layer then add a toffee filling and chocolate topping with sprinkled pretzels on top, the dry layer is a nice compliment to the creamy and sweet topping.

Pretzel Toffee Bars

- 1 cup margarine
- ¾ cup sugar
- ½ teaspoon salt
- 2 cups all-purpose flour
- 2 14 oz cans sweetened condensed milk
- ½ stick margarine
- 3 teaspoon vanilla
- 4 oz semi-sweet chocolate chips
- 2 cups crushed pretzels
Instructions
- In mixing bowl, mix 1 cup margarine, sugar and salt with a mixer until combined. Stir in flourPress on the bottom of an ungreased jelly roll pan in a 375* oven for 10-15 minutes or until very lightly brownIn a saucepan, mix together condensed milk and margarine over medium/low heat until starts to bubble. Stirring continuouslyCook for 3 minutes more (and stir!). Remove from heat and stir in vanillaBake for 10-15 minutes or until lightly brownRemove from oven and immediately spread scatter chocolate chips on top of warm bars. Let sit for 2 minutes and spread carefully with a spatula, creating a frostingSprinkle with crushed pretzelsChill in fridge for 1 hour. Cut into squares and serve.
