Inside Out Stuffed Pepper Casserole
This supper recipe is like the popular stuffed peppers, but in casserole form. Easy to make and a frugal recipe for the family.

- 1.5 lb ground beef
- 2 cups white rice cooked according to package directions
- 1 cup beef broth
- 1.5 cups green, red and orange pepper combined, chopped
- 8 oz tomato sauce
- 12 oz diced tomatoes drained
- 2 cups cheddar cheese shredded
- water for the rice, according to package directions
Instructions
- Preheat oven to 375℉ and spray a 9x13 baking dish with cooking spray.
- Cook ground beef and chopped peppers until ground beef is no longer pink.
- Mix rice, broth, tomatoes and tomato sauce in a medium bowl.
- Pour on the bottom of a greased 9x13 baking dish.
- Add cooked hamburger and peppers. Sprinkle with the cheddar cheese.
- Cover with foil and bake at 375℉ for 30-35 minutes.
- Uncover and sprinkle with cheddar cheese and bake for 5 minutes longer.
- Serve.
Notes
This recipe calls for you to cook the rice before adding to the casserole. It speeds up the casserole cooking process.
