Spinach Bow Tie Pasta
A blend of flavors of mushrooms, tomatoes, and spinach in a light vegetable broth.

Ingredients
- 10 oz bow tie pasta
- 4 oz mushrooms can be canned or fresh
- 2 cups baby spinach
- 14.5 oz petite diced tomatoes
- ½ cup vegetable broth
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoon minced dried onion
Instructions
- Cook pasta according to package directions until pasta is al dente. (About 5-7 minutes)
- Meanwhile, sauté the mushrooms and tomatoes together in a frying pan for 7-10 minutes
- Add spinach and cook for 3 minutes
- Drain pasta and add pasta to the vegetable mixture
- Add vegetable broth to pasta and vegetables and cook for another 5-7 minutes and add salt, pepper and onion
- Serve and enjoy
