Ingredients

milk (I used almond milk)
¼
cup
oil

cups
all purpose flour (I used unbleached)
½
cup
sugar
2
teaspoon
baking powder
¼
teaspoon
salt

tablespoon
lemon juice
Instructions
Mix together egg, milk, oil and lemon juice in a small bowl. Set aside.
Mix together flour, sugar, baking powder and salt in a medium mixing bowl.
Stir in the egg mixture with the flour mixture just until moistened.
Fill greased mini loaf pan ½ to ¾ full.
Bake in a preheated 375* oven for 15-17 minutes or until test done.
**You can also use a regular loaf pan if you don't have mini loaf pan. Bake for 40 minutes.
