Place cooked chicken, diced tomatoes, beans, and tomato sauce in a large skillet
Cook on medium heat for 5 minutes
Add rice and 1 cup water
Stirring occasionally, cook on medium low heat until rice softens and soaks up water
*If you need to add more water because rice isn't soft enough for your liking, add ½ cup and cook a while longer*
Serve with tortilla chips or with flour tortillas. Add sour cream and cheese if you choose
NOTE: Always use cooked chicken in this recipe. To always have cooked chicken on hand for recipes like this, I will cook the chicken in the crock pot on high for 4-5 hours or until juices run clear, then let it cool and put it in freezer bags. Then freeze it.
