Ingredients

bow tie pasta

mushrooms
can be canned or fresh

baby spinach

petite diced tomatoes

vegetable broth

salt

pepper

minced dried onion
Instructions
Cook pasta according to package directions until pasta is al dente. (About 5-7 minutes)
Meanwhile, sauté the mushrooms and tomatoes together in a frying pan for 7-10 minutes
Add spinach and cook for 3 minutes
Drain pasta and add pasta to the vegetable mixture
Add vegetable broth to pasta and vegetables and cook for another 5-7 minutes and add salt, pepper and onion
Serve and enjoy
