Ingredients

  • 2 cooked and diced chicken breasts
  • 1 1/2 cup dried rice
  • 1 can diced tomatoes with chili's (do not drain)
  • 1 can black beans (do not drain)
  • 1 small can tomato sauce
  • water

Instructions

  • Place cooked chicken, diced tomatoes, beans, and tomato sauce in a large skillet
  • Cook on medium heat for 5 minutes
  • Add rice and 1 cup water
  • Stirring occasionally, cook on medium low heat until rice softens and soaks up water
  • *If you need to add more water because rice isn't soft enough for your liking, add 1/2 cup and cook a while longer*
  • Serve with tortilla chips or with flour tortillas. Add sour cream and cheese if you choose
