Ingredients

all purpose flour

teaspoon
salt

teaspoon
baking powder
½
teaspoon
baking soda

teaspoon
sugar

egg

cup
buttermilk

tablespoon
oil

teaspoon
vanilla
Instructions
Mix the dry ingredients (flour, salt, baking powder, baking soda and sugar) together in a large bowl with a whisk or wooden spoon
Stir in egg, buttermilk, oil and vanilla, careful not to overstir
Using a ⅓ measuring cup as a guide, scoop out the batter onto a electric griddle or square frying pan that has been lightly greased with cooking spray
Cook the pancakes for 3-4 minutes over medium heat or until bubbles start to form in the pancake. Flip the pancake
Cook for 3-4 minutes again until the other side is done (lightly brown)
Remove from heat
Serve
Notes
Can top pancake with syrup, butter, powdered sugar or fruit.
