I think I may have mentioned once or twice my love for all things taco. Tacos are (if I may repeat) the best meal. It is like eating a dessert for supper. You can change the texture, flavor and look of the dish each time you eat it. Sour cream, salsa, lettuce, tomato: the choices are limitless! So when this Taco Rice Casserole idea came to me, I went with it!
I came up with this Taco Rice Casserole on a whim one day. We were in a hurry and what I had planned, wasn’t going to work out. I had started the hamburger frying while thinking what I could whip together. As per my custom, I instantly thought of tacos. But how could I change it up some?
How about meat, rice and cheese? Easy, well liked by most in the family and I can put it together quickly. Casseroles are great recipes to have on hand. Easy to make and very filling, it will feed your growing family on a frugal budget.
Needless to say, it was a hit. Well, it was for everyone who likes rice. For our daughter, she picked at it. Not a rice fan. Oh well. Eat it anyway, dear. :-)
Taco Rice Casserole Recipe
- 1 lb cooked hamburger seasoned with taco flavoring
- 2 cups of cooked rice
- 1/4 cup tomato sauce
- Cheddar cheese
- Mix the hamburger and tomato sauce
- Mix in the rice
- Place in a greased square casserole dish
- Sprinkle cheese on top
- Bake for 15 minutes or until cheese is melted
