This Strawberry Cream Cheese Cake is full of flavor with the French Vanilla cake mix, cream cheese and cool whip center, complete with white chocolate chips. A light cake bursting with flavors which compliment each other.

I had promised to take a salad to my husband's parents house. The Springtime Salad with Poppy Seed Dressing was seen on Facebook by a family member and encouraged me to bring it. I had to agree. However, the day before the get together, I wanted to bring a dessert. I always bring desserts as it is something I really, really enjoy doing. That and my hubby's sweet tooth usually asks it of me. :-) As I was contemplating what to make, I, of course, fell back on the box cake mix. I mean, after all, great desserts can be made from the cake mix. When I saw the strawberries in the fridge, the ideas started forming. Strawberries, cream cheese, cool whip...yes, Strawberry Cream Cheese Cake it shall be. {And it is so, so easy to make!}
The strawberry cream cheese cake is really a basic French Vanilla Cake mix. I think a white cake mix would taste great with this as well, but the French Vanilla added some depth in the flavoring. {By the way, does making a cake leave you frustrated because it doesn't raise right, come out of the pan right or is crumby when you frost it? I wrote a series on baking a cake. Be sure to check it out.} I have a cream cheese mixture I use often for different fillings in my desserts and it is a favorite. Adding the strawberries was the icing on the cake {forgive the pun}. The sweet strawberries added a perfect flavor. I also put in some white chocolate chips. I had mixed them into the filling for a great added punch of flavor.
I use certain Wilton supplies for this strawberry cream cake. *Wilton round cake pans and *Wilton cake leveler (really, really comes in handy! I use more often than I thought I would). I highly recommend if you are a baker to have the cake leveler. You will use it a lot.
Don't let this recipe overwhelm you. The strawberry cream cheese cake comes together easily and looks impressive. {But it is easy, really!} ;-)
Strawberry Cream Cheese Cake
Ingredients
- 1 box French Vanilla cake mix (and ingredients listed on back of box)
- 1 8 oz box cream cheese (softened)
- 12 oz container Cool Whip
- 1 to 1 ½ cups powdered sugar
- 1 lb strawberries (washed, stems removed and quartered)
- ¾ cup white chocolate chips
Instructions
- Make the cake according to package directions.
- When cake is done baking, let cool for 10 minutes then remove from circle or 9x13 pan.
- Let cake cool completely.
- Mix together cream cheese and powdered sugar with a hand mixer.
- Fold in 1 cup Cool Whip.
- Fold in white chocolate chips.
- Fold in ½ cup strawberries (or more or less, depending on how much you want on top).
- Slice your cake in half, horizontally.
- Spread cream cheese filling on bottom half of sliced cake.
- Put top half of cake on top of filling.
- Spread rest of Cool Whip on top of cake and place the remaining strawberries on top.
