Thanksgiving is this week. I can hardly believe it.
I have fond memories of Thanksgiving. My grandparents (who lived next door) would come over for the day. We would eat on the “special” dishes and share how we are thankful. We would always have turkey, mashed potatoes and stuffing. The day was filled with fun, memories and traditions.
Of course, time moves on and now I have a family of my own. I like making traditions with my husband and children, ones they will remember for years to come. From the meal to the table settings to the dessert afterwards, I want the Holidays to be special and fun. Of course, I also want everything to be tasty.
Searching for the perfect recipes to make the Holiday meal extra special is something I enjoy doing. I enjoy going through old recipes, remembering what was a tradition at my home, then combining them with new recipes I find.
Stuffing is such a key dish in a Holiday meal. I enjoy finding new recipes for stuffing, though finding the perfect stuffing recipe is a challenge. The taste, texture and flavor all have to be just right to compliment the main dish.

Knowing I wanted to give this Sausage Cornbread Stuffing a try, I headed to Meijer.
After bringing the ingredients home, I got to work.
For starters, I mixed up the cornbread. I decided to put the cornbread muffin mix in my mini muffin pan for a faster cooking time.
After the cornbread was cool, I crumbled the cornbread in a shallow baking dish. It needs to be toasted for 10 minutes.
While the cornbread was in the oven, I chopped the celery and onions. I also cooked the sausage.
The house smelled amazing while the Sausage was cooking. The spices in the sausage complimented the celery and onion well.
I mixed the toasted cornbread with the sausage and vegetables. I also added the parsley, chicken broth and egg.
After baking the sausage cornbread stuffing, my family could hardly wait to try it. Sure enough, this recipe did not disappoint. It was delicious, flavorful and a “must make again”. Got to love a satisfying recipe.
