Mexican Hamburger and Rice was as most of my meals are, last minute. I try to plan ahead and often times rely on my slow cooker to cook the meals for us while we are away. However, sometimes, even that doesn’t happen.
You know those mornings, the ones where you have to be out the door before you can even think of throwing something in the slow cooker. Those mornings when your morning shower is 5 minutes long and you can’t find socks for your three year old because he took them off in 8 different locations throughout the house and no pairs got washed in 6 days and you find a pair of socks only to discover the 7 year old never combed his hair and the 10 year old is still reading her book and the 13 year old is at the door hollering that we are going to be late, can we just get into the car??
You know, those mornings.

So when we have mornings like that and it is important to make sure I have a bag of tricks, so to speak, up my sleeve for supper. What can I make in a short amount of time that my family would like and my husband would appreciate on his dinner table.
Mexican Hamburger and Rice is just the recipe for busy days. If you have hamburger already cooked on hand, which I strongly recommend, it is even easier to put together this dish. I have to admit, I don’t always have already cooked hamburger in the freezer. (Though when I do, I always, ALWAYS ask myself why I don’t have it cooked up all the time. Goal for the new year!) 🙂
The ingredients for this dish you probably already have at your home. You can add as many spices as you would like for your family preference. Want to serve it with tortilla chips? Please do. Like sour cream and cheese on your Mexican dishes? Load it on there. Adapt the Mexican Hamburger and Rice however your family will enjoy it.

Mexican Hamburger And Rice
- 1 1/2 lb hamburger (cooked, drained)
- 1 1/2 cup rice , uncooked
- 3 cups water
- 1 can diced tomatoes with chili's (drained)
- 1 small can (6 oz) tomato sauce
- Cook hamburger (adding salt and pepper to taste), set aside
- Boil rice in water according to package directions
- When rice is done, add rice to hamburger in skillet
- Turn burner on medium/low and add tomato sauce and drained tomatoes
- Stir and cook until heated through
- Serve with sour cream and tortilla chips, if desired
