I somehow survived the week, month, day, hours (?). It has been a crazy few weeks but I *think* I might see the light at the end of the tunnel. Maybe. Basketball starts today, so I am not quite sure. I wanted to be sure to put a Menu Plan Monday post up so all of you will hold me accountable for sticking with a menu plan AND freezer cooking. I WILL find time to freezer cook this week. I have missed it greatly!
It is getting rather chilly in my neck of the woods so soup has been a favorite around here. We eat so much soup. It is a great meatatarian compromise, it sits in the crock pot cooking away while I do other things and it is warm! We had this hamburger soup the other day:

I made the Cream of Chicken Soup for when we had guests yesterday and I am so appreciative of the “add ingredients to the crock pot and walk away” type of meal. Especially on Sundays when it is a task to get everyone out the door. On time. With their hair still combed. With Bibles in hand. With matching shoes. (Can I hear an AMEN?) ;-)
Here is our weekly menu plan:
Cereal, toast, oatmeal, Blueberry Coffee Cake
PBJ, macaroni and cheese, carrots, apples, salads (me!), grapes, granola bars
Leftover Cream of Chicken Soup, grilled cheese, green beans
Beef and Noodles (I’m making my own egg noodles with this recipe from the Hillbilly Housewife. Can’t wait to see how they turn out! I’ll be sure to post about it!), mashed potatoes, corn, homemade rolls
Pancakes, eggs, fruit salad
Chicken and rice casserole, veggies, fruit, apple dessert
Hamburgers, french fries, salad
