Another reason to fill the freezer…I was able to make this salad with the grilled chicken and blueberries I had put away in the freezer. Yes, it is without salad dressing. Who needs it when you have blueberries, mandarin oranges, almonds and grilled chicken as toppings?
It’s school week! Don’t mistake that sentence for excitement. It isn’t. It is just a fact. On Friday, my older two head back to school. I won’t start homeschool with Cade until next week. I always miss my children, but as Ryan has been saying lately, he’s ready. (And his first cross country meet is next week.) Ryan needs that brain of his challenged and stretched.
With school this week, I am going to have a school freezer cooking day with my children. At this age, they can help fill the freezer with PBJ’s, blueberry cups and so many other great school lunch box treats. (By the way, if you need a lunch box, there are some great deals over at Amazon today.)
I always have the “first day of school breakfast” for my children. Most years they choose something different, but this year is the same as last year. They want homemade cinnamon rolls. I will manage to make those, somehow. ;-)
I also have boxes and boxes of peaches. Peach butter, peach muffins, canning peaches…I don’t really have time this week, but I guess I don’t have a choice. Be prepared for a lot of peach themed recipes in the next couple of weeks. ;-)
