I think I may have mentioned it before, but my husband is a meatetarian. Not a vegetarian. I have tried to have meatless meals in the past and it didn’t fly. Not in the least. The only meatless meal he allows is the breakfast for dinner we have. I have been making breakfast for dinner for several years, just to get a meatless meal on the table and save a little money.
When my family member first served this vegetable soup, I was skeptical. I mean, I was a teenager then and didn’t care that much for soups. It had green beans and peas and unidentifiable objects floating in it. There were LIMA BEANS! Oh, the horror!
Then I tasted it.
I almost had to lie down. It was so good!
When I got married, I didn’t even try to make this vegetable beef soup for the hubby because I knew there was no way EVER he would even try it. Why waste my time, right? Well, as I got a little older and a little wiser, I realized I could make this soup, hubby style. So I did. Lots of beef, lots of potatoes, small diced tomatoes and tiny chopped up carrots.
He ate it and declared it…REALLY GOOD!
So if you have a meatetarian husband like I do, try this soup. Try this soup even if you don’t. It is a no fail winner e-v-e-r-y time. Add what you like. Don’t add what you don’t. And it cooks in a crock pot all day. Gotta love it.
Vegetable Beef Soup
1 lb stew meat (or beef of choice)
3-4 potatoes, peeled and chopped into bite sized pieces
chopped carrots (however many you like)
1 can of beef broth
6-7 cups of water
1 small can tomato sauce
1 can diced tomatoes
1/2 cup chopped onion, optional
Fully cook beef. I will put the soup in one crock pot and the meat in another. The meat will cook in the morning, then I will add the meat to the soup for the rest of the afternoon. Or you can brown the meat in a frying pan. Either way, season meat with garlic, salt and pepper to taste.
Add all the other ingredients to the crock pot and cook on high 7-8 hours. Serve with crackers.
