I’m a salad dressing snob.
This may shock some of you, but up until recently, I never liked salad dressing on my salads.
Baffling, I know.
I don’t know why I didn’t. I think it might have been because growing up, French dressing was the dressing of choice. I shiver thinking about it. I guess I assumed all dressings were as awful (to me) as French dressing. It wasn’t until I was in my 20’s I would even try Italian. I would literally have people look at me aghast when I would say I don’t like dressing. It was good table conversation for at least 5 minutes.
I have changed a bit.
I will eat most Italian dressing. I have also learned HOMEMADE dressing is the key to a good dressing. Hands down better. I’m still a little leery when I go places and they serve a salad with unknown dressing on it. When I had the Craisin salad put in front of me by a friend, I knew I should try it. I was a little apprehensive. For the sake of the friendship, I took a bite. Oh, yum. I think it is the combination of Craisins (which we love) and the sweet dressing.
I have made it countless times since. It is probably my favorite salad. Try it, I’m sure you will like it!
Green leaf lettuce
2 slices bacon (cooked and crumbled–can be omitted. I don’t usually have bacon on hand so I don’t usually add it.)
Craisins (I usually use half the bag when making a large salad)
1/4 cup red onion (chopped)
1/2 cup sugar
1/2 tsp salt
1 tsp dry mustard
1/4 cup red wine vinegar
Blend all dressing ingredients together in blender (or I use a magic bullet). Add 1/2 cup oil. Blend. Pour dressing on salad right before serving. We just put the dressing off to the side and let everyone add their own.
