Yesteryear at home with mom or at Grandma’s! I don’t know about you, but we had this growing up. I don’t believe my mom used a crock pot but rather cooked it in the oven. Personally, the slow cooker is the tool for me and a busy mom’s best friend.
So how do I make this slow cooker roast beef?
It is quite easy and the trick is in the layering.
If you want every element of the recipe fully cooked, I would advise you to layer the crock pot in this order: carrots, potatoes, roast with the optional celery on the sides.
The roast will cook causing the juice to fall to the bottom, which of course, the carrots are at. It also has to pass by the potatoes causing them to be saturated in flavor.
How should I season the roast?
Good question. I prefer to use Coarse Kosher Salt on meat. It provides so much flavor and it softens the proteins making the meat tastier. You can, of course, use regular table salt.
If you don’t have onions on hand, you can use dried minced onions. Which is what I used. There is also garlic powder on the meat.

What if I don’t like celery? Do I have to add it?
No. That is actually why I left ours in two long stalks. My family isn’t a fan of celery (cooked) but it adds so much flavor in dishes like this. I do recommend it, but you will still enjoy the roast either way.

- 2.5 lbs chuck roast
- 6 medium potatoes
- 20 baby carrots
- 2 stalks celery
- 1 tablespoon coarse salt
- 2 tsp black pepper
- 1 tsp garlic powder
- 1 tablespoon dried onion or half of a yellow onion
- 1/2 cup beef broth
- Layer carrots, peeled potatoes, roast in that order in a slow cooker
- Add the two stalks of celery. (On the side or where ever it fits)
- Add salt, pepper, onion, garlic powder on top of roast
- Pour beef broth around the sides of the crock pot
- Cook on high for 5 hours or low for 10
