Do you remember these wafer cookies from when you were a child? I think most of us can remember going to grandma's house and enjoying these cookies. Vanilla, chocolate, strawberry, we had them all.
Now, how about adding a little bit of almond bark and sprinkles to the wafers? Well now you have Christmas Wafer Cookies.
These Christmas treats are quick to make for that last minute plea by your child "Mom, I forgot I need you to make a Christmas treat...".
Ingredients
- Vanilla wafer cookies
- almond bark
- various sprinkles
- crushed peppermint
The toppings
The toppings can be anything you would like them to be. For Christmas, I would stick to the red and green sprinkles or sanding sugar.
Crushed peppermint is a great topping. It adds a little kick and extra crunch to this Christmas dessert.
Melting the almond bark
I have made many recipes using almond bark such as chocolate swirl peppermint bark and crunchy butterscotch candy.
The process of melting the almond bark is so simple and the directions are on the back of the almond bark bag.
This Christmas cookie recipe needs about 5 squares of almond bark. So, it will need to be placed in a microwave safe bowl, set for about 1 minute. Then you will stir the almond bark.
It is so important to stir after every interval as you don't want the bark to burn. If the bark isn't melted completely, melt for an additional 20-30 seconds. Then stir. Repeat as often as necessary to have completely melted almond bark.
Time to dip the Christmas wafer cookies
The process is so simple. Take the wafer cookies and dip as much as you would like into the almond bark. I only dipped the top so there would be a "handle" for the eater to use.
The entire cookie could be dipped if you desire.
Immediately after dipping the wafer, either dip or sprinkle the toppings on. Then set aside on wax or parchment paper to let set up.
Tip
If you dip the wafer with the almond bark into the toppings, you may get a little almond bark drops into the toppings. Totally okay, just might get a bit clumpy.
For best results, sprinkle the toppings on the almond bark.
Let cool
Now, the cookies just need to cool and set up. It doesn't take long and it doesn't need to be refrigerated.
Let the Christmas wafers set up for about 30 minutes to 1 hour.
Storage
After fulling setting up, this dessert will need to be kept on the counter in an airtight container.

- 1 wax paper or parchment
Ingredients
- 20 wafer cookies
- 5 squares almond bark
- various sprinkles
- ¼ cup peppermints crushed
Instructions
- Spread wax paper down on a cookie sheet or on top of a countertop.
- Place sprinkles and crushed peppermint in bowls.
- Melt almond bark in microwave safe dish according to package directions. Approximately for 1 minute, then stir. Then 30 second intervals, stirring each time until completely melted.
- Dip wafer cookies in the almond bark, then sprinkle on the toppings.
- Set on wax paper then let set up and cool.
- Store in an airtight container on the counter.
