Cauliflower scares my family.
I personally like it. They do not. They would rather eat broccoli. They would rather eat peas. Honestly, I don’t know what the big deal is and why they act like I am torturing them when I put it on their plate.
However, I think I found the solution. Cauliflower Tater Bites is cauliflower you can dip in ketchup. Cauliflower Tater Bites has cheese in it. Cauliflower Tater Bites tastes a lot like tater tots.
And I think they wouldn’t have even known what they were eating if SOMEONE wouldn’t have walked into the kitchen and saw the dreaded cauliflower. Then tell everyone in a four room radius what exactly was going into the “new side dish mom is making”. Good Grief.
It was an uphill battle from the start.
Thankfully, I was prepared for such a reaction. How did I combat the waves of “mom, do I have to try it”? I told them their father was going to try one.
I got a look. He tried one. He’s the best. ;-)
The verdict from all children and hubby?
“These really aren’t bad.” That is HIGH praise coming from something made of cauliflower. My opinion? They were great. And just so you know, I had Ryan come up to me later and suggest I chop the cauliflower up a little more. If I do that, he would really like them. Eager suggestion or obedient resignation. I’ll take either at this point.
There are many recipes on the internet for Cauliflower Tater Bites. I adapted the recipe from Skinny Taste.
Cauliflower Tater Bites
2 cups cooked cauliflower
1/2 cup shredded cheddar cheese
1/2 cup garlic croutons
salt and pepper
I used my food processor to grind up the croutons.
I then added all the ingredients except the cauliflower in a bowl.
I first steamed the cauliflower to soften it then used my food processor to chop it up.
I added the chopped cauliflower to the bowl and mixed it up.
I then formed the bites with my hands. Kind of an egg shape.
Bake the bites at 375* for 15 minutes or until lightly browned.
