There is no better meal than a taco. Tacos have always been hands down my absolute favorite dinner. We eat something taco related once a week. Hard shell, soft shell, taco salad or taco soup, it doesn’t matter. Thankfully, it is a favorite of my family so they don’t mind my obsession. I mean, really, you can add cheese, salsa and lettuce on one taco then for the next you can add onion, tomato and sour cream. Completely different experience in the same meal. How fun is that?!?
I am always coming up with ways to serve tacos. I was brainstorming the other night, trying to think of a meal to take to some friends of ours. That is when this brilliant idea popped in my mind. Tacos. Potatoes. Cheese. Oh, yum. This won’t disappoint I promise. The mixture of soft potatoes and spicy hamburger with added salsa for a kick. Again I say: oh, yum.
Taco Potato Casserole
5 Medium Potatoes (washed, peeled and diced)
1 lb. Hamburger (cooked, added with your favorite taco spices)
Taco Toppings: lettuce, cheese, sour cream, salsa, onion, tomatoes, etc…
Place potatoes in a lightly greased casserole dish with a little water on the bottom. Cover with foil and bake for 40 minutes at 425* or until tender. Take potatoes out of the oven and place taco meat on top of potatoes. Add cheese. Place bake in 350* oven for 5 minutes or until cheese is melted.
Remove potatoes from oven and add topping such as lettuce, onions, tomatoes, etc… Serve warm.
What’s is great about this casserole is it can be adapted to everyone’s tastes. On part of it, I can add tomatoes. I can leave a corner of the casserole blank for the kids. Really easy, good, taco filled supper.
