It was a no school day so we had some extra time on our hands. Usually in the morning, we have time for toast, eggs or cereal. I like to make something special for breakfast, but I don’t have time. Getting all four children out the door so we can drop the oldest two off at school keeps us hopping in the morning! After all the children got out of bed this morning (and after I got Caleb settled with his “nana and toast”), I told them I was making Blueberry Squares for breakfast. Oh, I love being the one who tells good news.
Blueberry squares are a soft, almost chewy like a brownie. Picture a brownie texture with blueberries. And no chocolate. It’s still good, however. Forget their isn’t chocolate. I will exchange chocolate for blueberry and cinnamon any day. No, really. That really was a rabbit trail, wasn’t it? Sorry.
These blueberry squares are probably my husband’s favorite. He enjoys it when I makes these, which I sometimes do for our breakfast at dinner nights. We typically have breakfast at dinner on Wednesday night AWANA nights because it is fast and easy to clean up. Plug for AWANA’s: see if you have one in your area. It is a great club for children! Then when you find one and you have an AWANA night, you can think of Baking With Mom and try these Blueberry Squares. (Kinda like If You Give A Mouse A Cookie.) Oh, and you may want some Pumpkin Pancakes to go with it. 😉
Melt 1/2 cup butter in microwave. Remove from heat.
1 cup packed brown sugar
1/2 cup sugar
2 tsp vanilla
Stir until mixed in.
In a separate bowl, mix:
2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
Combine the flour mixture in with the butter mixture and mix well. Fold in 1 cup blueberries.
Heat oven to 350*. Spread in a greased 9×13 pan. Sprinkle with cinnamon and sugar. Bake for 30 minutes or until top springs back.
