    This delicious ice cream cake is layered with caramel, brownies and OREOS. Great dessert recipe.

    Caramel Brownie OREO Ice Cream Cake is creamy, chocolate-y and drizzled in caramel goodness. I'll leave it at that. ;-)

    I may have mentioned once or twice but the clearance aisle is one of my favorite places to frequent. Rows and rows of marked down items just waiting for someone to snatch them up and use them for good. Not rejected items, no, I prefer to say misunderstood items that may have had a bad start in life. A dented box here and ripped bag there. Yes, these items deserve a second shot. And I, Baking With Mom, am more than willing to help these items get their glory in a recipe.

    Like the caramel brownie OREO ice cream cake. It never would have been made if I hadn't found the Sea Salt Caramels marked down in the clearance aisle. However, they were found, and I wanted to give them a chance. I am so glad I did. (If you want see what the sea salt caramels are, you can look here.)

    I may appreciate a good deal a little more than the next person. Sorry, not sorry. ;-)

    Caramel Brownie OREO Ice Cream Cake

    The caramel brownie OREO ice cream cake is a delicious blend of chocolate with ice cream, caramel with OREO filling. The brownies come from a cake mix and the ice cream isn't homemade. The recipe is simple to make, though be sure to plan ahead for freezing in between layers. The caramel chips melted beautifully and as you can see, created a wonderful effect on the frozen dessert.

    If you don't have round pans, I would recommend getting some. They are handy to have and can be used in many instances such as cakes or for cornbread. Check out these pans here.

    You really could use any candy topping on top in place of the OREOS. Then, of course, you would have to rename it, but I suppose that would be okay.

    Ingredients
      

    • 1 box brownie mix (plus ingredients listed on box)
    • 1 package Sea Salt Caramel Chips + 3 Tablespoons milk
    • 1.5 qt ice cream (vanilla or OREO)
    • 10 OREO cookies

    Instructions
     

    • Make brownie mix according to package directions and bake in two 9 in round pans (15 minutes or until tests done)
    • Remove from oven and let cool
    • Remove brownies from pan and layer ice cream on top of one of the brownies. Place other brownie on top of ice cream. Place immediately in freezer.  
    • Freeze for 30 minutes
    • Make caramel by melting chips and milk in a medium saucepan on low heat, stirring continually
    • Pour caramel on top of brownie cake, sprinkle broken up pieces of OREO on top and place in freezer for 2 hours
    • Cut and serve
