I could not believe how easy this caramel apple crisp with apple caramel cookies was to make. So simple to make and it starts with pre-made cookie dough for the crust. Totally delicious!
Caramel Apple Crisp with Apple Caramel Cookies came to me in the middle of the Kroger store actually. I walked past a Caramel Apple Cookie package and I thought to myself: surely there is something I could do with these great cookies.

Really, if you were to pass this sitting in the cooler, wouldn’t you grab it? I thought so.
Fall is special to me. Our third child was born in the fall season, apples are my favorite fruit and who doesn’t enjoy harvest season with tractors and combines. (America as it’s finest.)
Caramel Apple Crisp with Apple Caramel Cookies
Simply put the apple caramel cookies on the bottom of the baking pan. Then spread the apple filling on top of the dough. You can use fresh apples if you would like, but the cooking time would be longer and quite honestly, apple pie filling works just lovely and it is delicious.
Now comes the extra yummy/sugary/delicious part.

Who knew a mixture of brown sugar, flour and butter can turn into something so delightfully delicious? Great invention.

A delicious fall dessert with crispy apples, rich caramel and brown sugar topping.
- 1 pkg Apple Caramel Cookies
- 1 can apple pie filling
- 1 cup brown sugar
- 2/3 cup flour
- 1/4 cup melted butter
Place cookie dough on the bottom of a greased 8 or 9 inch square pan, flatten until all dough is spread out on bottom of pan
Spread apple filling on top of dough
Mix brown sugar, flour and butter in a small bowl. Sprinkle on top of apple filling
Bake in a preheated 375* oven for 20-25 minutes or until bubbly and cookies are cooked through. Let cool for 5 minutes
