There are recipes I wish I could claim are mine. You know, I could attach my name to, that I thought up. I REALLY, REALLY wish I came up with these Blueberry Oatmeal Breakfast Bars. Alas, I did not. I saw these on Facebook made by a blogging friend of mine, Erin at Delightful E Made. Instantly, I knew I wanted to try them. They looked like something my family would like, we have plenty of blueberries in the house and I am always looking for quick and freezable recipes.
I have, um, made these three times in the one week since I first saw them.
Yes, I did. And they were gone within 24 hours of making them. I’m sorry. Keeping it real.
In my defense, one pan went to the cross country team’s breakfast. The other pans were eaten by just us. Ahem. They are delicious, sweet, fruity and very adaptable. The second time I made them, I made them with cherries. WONDERFUL! I think what is also great about this recipe is how EASY they come together. Very simple and doesn’t take a lot of time. Chances are, you already have the ingredients on hand.
I didn’t change her recipe except add cinnamon to the dry ingredients. If you have read Baking With Mom for any length of time, that shouldn’t surprise you. At all. 🙂
