This Cake Mix Coffee Cake recipe came from our dear neighbor. I would hear a knock on my door and find her standing at the doorway with something yummy. She spoiled us. 🙂 She is the best baker so the children (and us!) gladly take whatever she has to offer. In fact, my Strawberry Pie recipe comes from her.
This is one of those recipes that comes together so easily. In fact, I threw all of the ingredients into the mixer and walked away from it to accomplish other things this morning. Mornings are never dull around here, always something to do. And someone to wake up. I had the coffee cake in the oven and the kitchen cleaned up before anyone even came into the kitchen. I was then bombarded with the “what did you make” question followed by the “yum” exclamation finishing up with the “when will it be ready” plea. Great start to the most forgotten day of the week. In case you are wondering, that would be Tuesday. 😉
Cake Mix Coffee Cake
1 box yellow cake mix
1 pkg instant vanilla pudding
1 cup sour cream
1/2 cup oil
Beat 5 minutes with a mixer. (Have I mentioned my LOVE for my Kitchen Aid Mixer yet?? If I haven’t, you will hear it often!) Spray tube pan (bundt pan) with cooking spray. Pour half of the batter in pan. Take 1/2 cup sugar and 2 tsp of cinnamon and mix together. Put mixture on batter, then add rest of batter on top of it. Bake for 35 minutes at 375. It is done when knife inserted in center of cake comes out clean. Turn out of pan and let cool for 10 minutes.
