Apple cinnamon sponge cake makes up quicker than on may think. It only has a few easy ingredients. It also makes your home smell warm and apple-y.
Who doesn’t like apple-y smell of fall? I love apples and all thing apple related.
After all, an apple a day keeps the doctor away. I wonder what apple cinnamon does??
What is in a sponge cake anyway?
A sponge cake is a light and fluffy cake that springs back when you touch it. It does indeed have a sponge like texture. It has simple ingredients in it and it doesn’t have much fanfare. It is simple, really.
It also is used for shortcakes. So if you wanted to make a strawberry shortcake, this could be the cake you would use.
Why the apples?
I wanted to add another dimension in the cake. It is fall, y’all and apples is a sign of fall. And really, once you put apples in anything, how can it go wrong, am I right?

The apple layer is a lot like an upside down cake. In fact, after baking you will flip this cake upside down.
How do I make the Apple Cinnamon Sponge Cake?
You start by removing the core of one apple. I have an apple corer like this one that I use not a lot, but enough for me to appreciate having it. Then you slice the apple so you have apple rings and dip the apple in a cinnamon sugar mixture.
Then you place them on the bottom of a 8×8 or 9×9 square baking pan like this one. Afterwards, you mix up the sponge cake.
Then pour the mixture on top of the apples in the pan. Bake for 30 minutes and it’s done!
How do we get the apple cake out of the pan?
There is a trick to removing cakes from a pan. If you turn it over right away, it could fall apart. If you wait too long, it could stick.
Oh, the problems of bakers. 😉
The best way to remove the cake from this pan (since you want the bottom to be the top), is to wait about 7-10 minutes then flip the pan over onto a plate. Be sure to loosen the sides of the cake from the pan first.
Then the cake should slide out easily.
You can top the apple cinnamon sponge cake with ice cream or homemade whipped topping. Or you can use Cool Whip. It all works.
Apple Cinnamon Sponge Cake
- 1 apple medium, washed
- 1/4 cup white sugar
- 2 tsp cinnamon
- 3 eggs
- 1 cup sugar
- 5 Tbsp water
- 1 tsp vanilla
- 1 cup flour
- 1 tsp baking powder
- Mix eggs, 1 cup sugar, water and vanilla
- Mix in the flour and baking powder. Set aside
- Mix together cinnamon and 1/4 cup sugar in a small bowl. Dip the sliced apples in the cinnamon sugar on both sides
- Place the apples in a single layer on the bottom of a greased 8x8 square pan
- Pour the batter on top of the apples
- Bake at 325* for 30 minutes or until done
- Remove from oven and let sit for 7-10 minutes on counter
- Use a knife to loosen the edges, then flip the cake over onto a pan
- Serve with ice cream or whipping cream
