I am going to enter a new phase as a mom. For the first time in 14 years, I have only a preschooler at home. It will be just our youngest, Caleb and myself as we tackle his preschool work together. I also have one in grade school, one in middle school and one in high school. Oh boy.

Making the banana blueberries muffins is easy to do.
First I mixed the butter and sugar
Then I added the eggs, bananas, water and dry ingredients
I mixed in the blueberries and scooped the muffin mixture into my mini muffin pans

Banana Blueberry Mini Muffins Recipe

- 1/2 cup sugar
- 1/4 cup melted butter
- 2 eggs
- 1 banana (mashed)
- 1/4 cup water
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1 cup blueberries , fresh or frozen
- Mix together the sugar and butter
- Stir in the eggs, banana and water
- Mix in the flour, baking soda, salt and baking powder
- Fold in the blueberries
- Spray two mini muffin tins with cooking spray
- Scoop batter into the tins
- Bake in a preheated 350* oven for 10 minutes or until toothpick tests clean
