I was so thrilled when I got strawberries on sale at Kroger last week. I bought 5 lbs for $.99 a pound. They were great, but as usual, I wanted to come up with something a little different to make with them. I mean, we will eat the strawberries on there own all day long, but who can resist making a new concoction out of strawberries? I certainly can’t. So, I came up with Strawberry Orange Muffins.
Strawberry Orange Muffins started from a mix in my freezer. (I am completely, totally hooked on having pre-made muffin mix in the freezer. It cuts down the time to whip up muffins in a hurry. I love the ease of it.) The basic recipe for muffins is the same, just tweak the flavor ingredients for the difference in the muffins. This recipe is the same as the Mocha Muffins and Mini Banana Muffins. Have I mentioned we like muffins at our house? 🙂
The key in successful strawberry orange muffins would be in the slicing of strawberries. Strawberries can get mushy in the oven and, well, rather slimy. Make sure you slice the strawberries very thin and in small pieces. You then will have flavorful and tasty strawberries that no one (even the picky eaters) will “eww” at. 😉
- 2⅔ cup flour
- 1 cup sugar
- 1 T baking powder
- ⅔ tsp salt
- 1½ tsp cinnamon
- 1 egg
- ¼ cup milk
- ¾ cup orange juice
- ½ cup melted butter
- 1 cup chopped strawberries
- Mix all dry ingredients in large bowl.
- Add lightly beaten egg, milk, orange juice and butter in small bowl.
- Add wet ingredients to dry ingredients.
- Stir well.
- Fold in chopped strawberries.
- Bake at 375* for 20-25 minutes or until tests done.
