Talk about excited. I wondered past my favorite section at Kroger and found boxes upon boxes of goodness, all marked down, waiting for me to buy it.
I kind of have a thing for the clearance aisle at Kroger. It is like opening a present. You never know what you can find. Last week, I scored huge on odds and ends items including several packages of batteries. My children were so happy. We always have a battery shortage around here.
This week I found cereal. Several boxes of dented packages of Strawberry Cheerios for only $.75 each. The boxes may not have looked perfect, but the cereal was perfect inside of them. Really? Cereal for under a dollar? I’ll take it.
With so much cereal I knew I had to make something with it. This Strawberry Breakfast Bars came to mind. I mean, after all, strawberry with gooey marshmallow and Rice Krispies make the perfect bar for breakfast or to take in a school lunch. Pair it with some fruit and the kids will be happy.
Wrap the bars tightly in plastic wrap and they will keep nicely for several days.
If you want, feel free to add dried cranberries or dried apple pieces. I think even chocolate chips would be great, however, it may get away from the breakfast idea a little bit.
Strawberry breakfast bars recipe is something you can whip up quickly and lasts for several days. As busy moms, that is just what we need.
- ½ stick butter
- 1 pkg marshmallow (large or mini)
- 3 cups Strawberry Cheerios
- 2½ cups Rice Krispies
- 1 cup oatmeal
- 1 cup peanut butter
- Melt butter and marshmallows in a medium saucepan on low heat
- Stir in peanut butter
- Stir in Cheerios, Krispies and oatmeal
- Spread in a greased jellyroll pan
- Press down on top of mixture with a spatula to set the bars in place
- Let set up for 30 minutes
- Cut and serve
