Summertime! I don’t know about you, but we have very busy lives during the school year. Three of our four children are in school and the youngest (Caleb) is currently taught at home. Homework, tests, after school activities; I am truly part chauffeur, part short order cook, part teacher and a full time mom! In short, we stay very busy!
All that said, I love being to circle the last day of school on the calendar. I know when the last day arrives, my busy schedule slows down and I can enjoy family time with my hubby and all of our kiddos. We love the summer sun and being outside enjoying the warm weather in our pool. Of course, with warm weather we need cool treats such as the Mint Chocolate Chip Brownie Sandwiches.
Thankfully, we have a 7 year old (Cade) who loves to help in the kitchen. During the school year, it is hard for him to help bake or cook because of how much we are gone or on the go. Summer comes, he is ready to start stirring. 🙂
I thought it would be a fun idea for Cade to help me make the Mint Chocolate Chip Brownie Sandwiches. The recipe is so simple with the Blue Bunny® Mint Chocolate Chip Ice Cream and Smucker’s Hot Fudge Spoonable Ice Cream Topping as the main ingredients. Smucker’s ice cream toppings are a great inexpensive way to add some fun to your summer ice cream. Besides, what is more fun than making your family a yummy summertime treat?
I was able to find the ingredients for the Mint Chocolate Chip Brownie Sandwiches at Walmart. The Blue Bunny® Mint Chocolate Chip ice cream is in the freezer section and the Smucker’s Hot Fudge Spoonable Ice Cream Topping is with the condiments/coffee and tea aisle.
Have you noticed the clear packaging on the ice cream containers? When we were shopping for the ice cream, we absolutely loved being able to see the swirls, chocolate chips and brownie pieces in the ice cream.
I mean, yum, right?!?
Since it all looked so delicious, I thought I would also pick up Blue Bunny® Mocha Me Hoppy™ and Blue Bunny® Super Fudge Brownie®.
Making the ice cream sandwiches was easy to do. Cade and I worked together and was able to get the recipe made quickly and had so much fun!
First, we used a packaged brownie mix. Simply make according to package directions.
Then, using a 1 inch scoop, put brownie mix onto a greased whoopie pie pan. The cup size is perfect and works great for these sandwiches. If you don’t have a whoopie pie pan, you can simply bake in a regular pan then once cooled cut out shapes. You can even use fun cookie cutter shapes!
Cade loved helping to spread the ice cream and Smucker’s Spoonable Hot Fudge Ice Cream Topping. Simply spread the ice cream (we used an ice cream scoop) on the cooled brownies.
Then spread the hot fudge topping on another brownie (the “lid” of the sandwich).
Put it together and delicious!
What you have is family fun in the summer and a great way to beat the heat! Our family’s reaction to the Mint Chocolate Chip Brownie Sandwiches? They loved them! We were strongly encouraged to “make them again”!

- 1 package brownie mix (plus ingredients listed on the back of the box)
- 1 container Blue Bunny(R) Mint Chocolate Chip Ice Cream
- 1 Smucker's Spoonable Hot Fudge Ice Cream Topping
- Mix brownies according to package directions and bake
- Take out of oven and let cool
- Cut into shapes (or use Whoopie Pie pan) and place cut brownies in freezer to harden for 1 hour
- Spread ice cream on one brownie (you can use one scoop--or more--based on your preference
- Spread 1 tablespoon ice cream topping on another brownie
- Place the two brownies together as a sandwich
- Repeat for all the brownies
- Keep in freezer until ready to eat
