Right now, I have a child in wrestling, a child in piano and student council and a child in track. I also have a four year old. (Enough said, right?) My husband is also finishing his degree and working full time. We.Are.Busy.
Yesterday, I found myself leaving the house 6 different times to drop off, pick up and swing by. Some of those times were within 15 minutes of each other. You know, because I either wait around at a school to pick up another child or I stop by home, drop the first child off and head back out to get the previously mentioned child.
When everyone gets home from their different activities, they want to eat. They are growing and hungry. My husband also expects a good, filling meal to help him get through the late nights of studying, tests and papers. It is my goal to have a meal on the table quickly. This meal also has to be healthy and nutritious. That is when recipes like Mexican Pork Chop Casserole come in handy.
Mexican Pork Chop Casserole
Mexican Pork Chop Casserole is very easy to make with only a handful of ingredients. The ingredients are also very versatile and you can put in different types of peppers or add onions if you would like. I wanted healthier ingredients in this casserole so I bought Smithfield All Natural Boneless Pork Chops at Walmart.
So easy to find! Right in the pork section. Make sure to find the label “All Natural”! Here’s an Ibotta coupon to go grab yours! (or click on the coupon below!)

The cooked Smithfield All Natural Boneless Pork Chops, tomatoes with chili’s and rice
Place ingredients in a greased casserole dish and mix well. You could place all the ingredients into a bowl to mix it but I would rather mix it in the dish. Saves on washing dishes, you know. 😉
Add cheese and bake for 15 minutes or until casserole is heated through and cheese is melted.
Serve with sour cream, if desired. You can even sprinkle with green onions or chives.
