Keeping it totally real right now. I have these Ghirardelli Chocolate Chunk Cookie Bars sitting in my kitchen and I may have to go get another one. Or two. Three? We will be having supper later tonight so maybe, just maybe I have an excuse.

The other day, while “Krogering”, I came across some fabulous, wonderful baking deals. One would guess they were cleaning out their Christmas baking stash. When a store cleans off their shelves, we win, don’t we?
In the pile of goods I was blessed to find, was two bars of Ghirardelli Chocolate baking bars. I had never really purchased a baking bar like that before, usually I use chocolate chips for, well, everything.
Our oldest, Ryan LOVES Ghirardelli chocolate so thinking about him, I got the two bars of baking chocolate. Yes, there were a lot more on the shelf. Yes, I should have gotten more than two bars. My mistake, live and learn.

The first time I used the chocolate to make cookies, Ryan was on the youth group ski trip. He was not happy with me. Apparently, regular chocolate chip cookies with regular chocolate chips are good, just not Ghirardelli. So, being the great mom I am, made up a batch of Ghirardelli Chocolate Chunk Cookie Bars when he got back. I had vultures (aka children) circling the mixing bowl while they were being made, but somehow the task got done.
Ghirardelli Chocolate Chunk Cookie Bars
To make these soft and gooey chocolate bars, you need a 9×13 pan. I have had various pans in my almost 20 year marriage but hands down my favorite has been the AirBake baking pan. The food bakes evenly and the pan has never warped. I have had the pan many years now and it doesn’t look worse for the wear, either. This pan also comes with a lid. This recipe is a family favorite. The cookies or bars can be whipped up in no time and I have used this recipe for years and years and years. White chocolate, M&M’s, milk chocolate and yes, even Ghirardelli goes great in this simple recipe.
- 1 cup margarine, softened
- ¾ cup brown sugar
- ¾ cup white sugar
- 1 egg
- 2¼ cup flour
- 1 tsp baking soda
- ½ tsp salt
- Ghirardelli Semi Sweet Chocolate Bar, chopped into small chunks (about 1½ cups)
- Mix margarine, brown sugar, white sugar and egg together in medium bowl
- Stir in flour, baking soda and salt
- Mix in chocolate chunks
- Spread in a very lightly greased 9x13 baking pan
- Bake at 365* for 15-17 minutes or until the top is starting to brown slightly and a toothpick comes out clean
