I’ve said it before, bananas are not my thing. I wish they were. We eat a lot of fruit in this house and bananas are so easy to grab on the run. The taste, texture, whatever is really not for me.
Except when it comes to banana bread.
No idea why that is the case, however, I’ll go with it so I can enjoy this delicious bread with my family. Chocolate Chip Banana Bread is good, really easy to make and it freezes wonderfully. My children will reach in the freezer and eat this for breakfast every morning until it is gone. Love that. Simplicity at its best.
Chocolate Chip Banana Bread
1/4 cup butter melted
3/4 cup sugar
2 bananas, mashed well (I use my food processor)
1/2 cup milk
2 1/4 cup flour
1 tsp cinnamon
3/4 tsp baking soda
1/2 tsp salt
1/2-3/4 cup chocolate chips
In a large bowl, mix the butter, sugar and eggs. Stir the bananas and milk. Add the dry ingredients and mix just until moistened. Stir in the chocolate chips. Pour in a greased loaf pan. Bake at 350* for 1 hour or until knife inserted in the center tests down. Cool for 10 minutes then turn out on a wire rack to cool completely.
